2 lemons, zest-ed and juiced (about 1/3 cup + 1 tablespoon)
1 cup of hulled barley (pearled barley can be used but the health benefits are reduced)
1 teaspoon of raw honey or grade B maple syrup
3 – 8 drops of **Lemon essential oil, to taste (we only use Remnant Remedy brand 100% pure therapeutic grade essential oils)
Sweetener of choice (raw sugar, stevia, raw honey, grade B maple syrup etc.)
In a medium saucepan, over high heat bring the water, barley and lemon zest to a full boil.
Reduce the heat, and simmer for 30 minutes.
Strain the contents of the saucepan through a fine mesh sieve. Reserve the barley for other recipes.
Pour barley water into a serving pitcher and stir in the lemon juice.
Mix the teaspoon of honey or maple syrup with the 3-8 drops of pure therapeutic grade essential oil of choice.
Stir into the barley water and add additional sweetener if desired.
Chill well before serving.
You can replace the lemon juice with any of the following: oranges, fresh peppermint, lavender blossoms, pomegranate juice, cranberry juice, pink grapefruit. With the citrus fruit, zest the peel as you would for the lemons in the recipe above.
The essential oil can also be changed to reflect the variety of fruit juice you will be adding to the barley water. Example: fresh peppermint leaves, use Peppermint essential oil – pink grapefruit, use Grapefruit Pink essential oil from Remnant Remedy.
** Essential Need to Know Information: Only use 100% pure therapeutic grade essential oils like those from Remnant Remedy. Other brands of essential oils, even those purchased from health food stores, can contain very little natural essential oil. By law they are only required to use 3% in essential oil solutions to be able to label them pure and/or natural. The balance of the preparation can be artificial or synthetic fragrances and flavors or contain chemical solvents.
This recipe makes a half gallon of refreshing and restorative Barley Water. Traditionally, Barley Water is flavored with lemon juice and rind but it can be omitted and other juices or herbs used in its place.
